Vkusoteka at the Moscow Dive Show 2024

Oysters are an annual highlight of the Delicatessen Fair program at the Moscow Dive Show. And the most popular question concerning them: how do you get oysters from all over the world really fresh? Responsible company-participant of the Moscow Dive Show 2024-Exit oyster bar "Vkusoteka":

"The classic and main method of delivery — all oysters fly by plane. However, the oyster's journey to the table begins either at auction or in the farmer's online store. Sometimes oysters are bought in advance, sometimes directly at auction: at a certain time, on a certain day, the entire batch is sold out using the auction system for an increase. In the case of farm products, the farmer collects the purchased oysters immediately from the sea or from the desalination pool at the specified time.

Then, on the same day, everything is transported to the airport by road with refrigerated trucks. Immediately loading takes place and the plane departs to the country where the buyer is waiting, in our case – to Moscow. At the airport, oysters are picked up in a refrigerator car and taken to the Vkusoteka team, and from there straight to the Moscow Dive Show Delicatessen Fair.

Oysters travel on coolers. Previously, they used (and the French still use) special seaweed, which acts as a thermos, and wooden boxes soaked in water. But in the vast majority of cases, oysters are transported not on ice,but on refrigerants. This is, roughly speaking, ice in bags – so that there is no excess moisture, the oyster can also suffer from this. All this is done in thermal boxes that preserve the temperature. At the same time, the oyster is specially "shocked" a little so that it closes, and it closes in the cold. If the oyster is closed, it can easily exist for 3 days.

Naturally, there is a rejection rate, because not all oysters can withstand such a long flight. An error of no more than 20% is considered normal.

If the delivery is not on a day-to-day basis, the oysters are dropped off in overexposure containers. Overexposure containers are large aquariums-pools that contain the water of the very meroir in which the oyster lived. If it is the Atlantic Ocean, then it is water with special, not artificial, but natural additives of the Atlantic Ocean, that is, it is actually salt from there. If it's the Pacific Ocean, then it's Pacific water, and so on. The Gulf of Oman also has its own chips, its own temperature and its own salt, for example. The oyster lands in a container and lives quietly there, waiting to be sent to the final buyer.

In any case, when the oyster is given to the buyer, it must be checked and all oysters that reach the visitors of the exhibition are, of course, fresh."


This year, the food court will again feature about 6 types of oysters from different countries – Russia, Japan, the United Arab Emirates, Morocco, and New Zealand. These will be wild and farmed oysters from the Pacific and Atlantic Oceans, collected on different sides of the equator, as well as exclusive views from the most interesting corners of the planet. This is the best thing you can find in Moscow today.

The cost at the exhibition will vary from 250 to 500 rubles apiece. If you buy a dozen, you will receive a special offer. Oysters will be served on crushed ice with a classic accompaniment: lemons, Mignonette sauce-wine vinegar, shallots and ground pepper, and hot pepper-based sauces.

The Vkusoteka stand will help you choose, tell you about each type of oyster, its taste characteristics and, if desired, teach you how to open it. In addition, you can not only taste oysters directly at the exhibition, but also take them with you in a special container.
